If you have ever grabbed a crepe and a coffee on NE 3rd Ave in Delray, you already know the people behind the darkest new dining room in town. Glimmer Café sits at 325 NE 3rd. Ethereal opened directly across the street at 324, and it could not feel less like breakfast. Low light, romantic industrial design, doors that do not open until 5 PM, and no menu posted anywhere online. You book a table, you sit down, and you find out what the kitchen is doing that night from the person pouring your water.

What It Actually Is

Ethereal is the second act from designer Nick Alain and chef Estuardo Mira, the same pair behind Glimmer. Alain has spent decades designing restaurants and hotels around the country, and he designed this room himself, so the space is not an afterthought bolted onto a menu. It is the point. The concept is described as immersive upscale dining built on elevated Floridian cooking, with the atmosphere carrying as much weight as the plates.

Mira is not new to this either. He ran the steakhouse Malbec up in Parkland before partnering on the NE 3rd Ave projects, and he is the one shaping what comes out of the kitchen here. Local dining guides list Ethereal simply as American, serving dinner daily, which is about as much as anyone outside the room has been told.

Here is the part worth knowing before you go. Ethereal does not publish its menu. There are no dishes and no prices on its site, on Resy, or anywhere else we could find. We are not going to invent a signature plate to fill the gap, because guessing at a chef's menu and printing it as fact is how you end up owing a restaurant an apology. What we can tell you is what the room has committed to in writing, and it is unusually firm for 2026: this is a dine-in experience and they do not offer online ordering. No delivery apps, no pickup window, no scrolling a menu on your couch. You come in or you do not.

The Insider Move

Book on Resy, then call (561) 270-2738 before you go if anyone in your party has an allergy or something they will not eat. Normally you would scan the menu online and quietly plan around it. You cannot do that here, so the phone is the workaround, and a five minute call saves the awkward table negotiation later.

Go early in the evening if you want the room itself. They open at 5 and run to 11 every night of the week, and a dark, candlelit dining space is at its best before it fills. If you want the opposite, the later end of the night is when a room like this earns its name.

One more thing only locals would think of. Breakfast and dinner are one crosswalk apart on this block now. Glimmer handles the crepes, smoothies and coffee side in the morning, Ethereal handles the candles at night, and they are run by the same family. It makes a genuinely easy full day out in Pineapple Grove without moving your car.

The Buzz

Ethereal has already had its grand opening and has drawn more than 10,000 followers on Instagram, which is a lot of attention for a room that has shown almost nothing of its food publicly. Delray locals have started asking each other for reports in community groups, the way people do when a place opens quietly and nobody has the first word yet.

We are deliberately not attaching a star rating or a review count to this one. The numbers on a restaurant this new move week to week and are not worth printing. What is worth noting is that the interest arrived before the menu did, which almost never happens.

Why Now

Delray has had a heavy run of openings this year, most of them arriving with a full menu posted and a price point telegraphed before the doors unlock. Ethereal went the other direction on a block most people only think about before noon. If you have been driving past that stretch of NE 3rd for years on a coffee run, the dining room is new territory hiding in a place you already know.
