The line outside Vosarya Pastry has been running 45 minutes and longer, and it is for a croissant. The husband and wife who run the place opened this summer in a strip plaza on Congress Ave with almost nobody watching. Then Nas of @gasolinereviewss posted about them and scored the visit a 10 out of 10, and Boynton showed up. Now the two of them are baking overnight just to keep the case full, and it still empties before closing most days.

What You're Getting Into

Vosarya is small. It is a counter in the D units at the Boynton Beach Promenade, about 20 minutes north of Boca, and there is no big dining room and no seating scene to speak of. What there is is a glass case, and what goes in it is made from scratch and baked that morning.

The pistachio croissant is the one to get. It comes up again and again in the reviews, and more than one person has called it the best croissant they have ever eaten, which is the kind of thing people usually save for a trip to Paris rather than a plaza off Congress. After that the case runs wider than you would expect from a shop this size. There is a spinach and cheese croissant and a spinach roll if you want something savory in the box, and regulars order both alongside the sweet ones rather than instead of them. The almond croissant, the pain au chocolat, the plain butter croissant and a biscoff croissant cover the classics. The danish rotation is where it gets interesting: sour cherry, blueberry, and a pistachio raisin that shows up in review photos more than it shows up in conversation. There is also a chocolate twist and a vanilla square for anyone who wants something that eats more like a pastry than a breakfast.

One thing to plan around. Vosarya has no website and no published menu or price list, so what is in the case on the day you walk in is what you are choosing from. That is part of why people keep going back, and it is also why you should not drive over with your heart set on one specific thing.

Go in the morning, and on a weekday if you can. They open at 10 Monday through Friday and stay until 6, but on Saturday and Sunday they open at 9 and close at 3, which is a much shorter window on the two days everyone else is also free. On top of that they close early whenever the case empties, so the posted hours are a ceiling and not a promise.

Park in the plaza lot and walk to the D units on the north side. Bring somebody with you, because the line is long enough that having a person to hold your spot while the other one looks at the case is a genuine advantage.

Buy more than one. Two people who each get a single croissant and then stand in the parking lot regretting it is the most common way this visit goes wrong.
