This Delray pizza dough rests for 48 hours. Rossano's Pizza Lab, in a strip mall on N Congress Ave, gives every dough ball two full days before it goes anywhere near the oven, and the result is a Neapolitan pie The Infatuation described as "at once crisp and delicate."

The shop calls what it makes "Florida Pizza." The recipe is Italian "00" flour, two days of rest, and a fire-burning oven that started its life on a trailer.
