It is 11:15 on a Friday night in West Boca and you are hungry. You already know how this goes. Everything on Glades with a real kitchen shut down an hour ago, and your options have narrowed to a drive-thru or a sad negotiation with your own refrigerator.
Except there is one place out here still going. Nomu Sushi & Pub sits in Shadowood Square at 9975 Glades Rd, and on Friday and Saturday it runs until midnight. Not the bar only. The whole thing, sushi included. For anyone west of the Turnpike who eats late, that single fact rearranges the map.
What You're Actually Eating
Start with the toro tartar at $30. It is finely chopped fatty tuna with black caviar in wasabi soy, and it is the dish people keep photographing. Diners describe it as rich and spicy with crunchy toppings that cut straight through the fat. If you order one thing here, order that.
The spicy tuna crispy rice at $17 is the one to get two of, because one order disappears immediately. Crispy sushi rice underneath, jalapeño, salsa, eel and spicy mayo on top. The mango tango roll at $18 is salmon and avocado under mango, crispy rice pearls and honey glaze, and it is the roll to hand to whoever at the table claims they do not like sushi. For the table, the shrimp and veg tempura app at $18 comes out hot with dipping sauce.
Then there is the top of the menu. The Grand 12 Omakase runs $95 and gives you twelve pieces of premium seasonal nigiri plus a toro-taku roll. The Ultimate Chirashi is $75, built on toro, uni, botan ebi, ikura and black caviar over seasoned sushi rice. If you want the full swing without the commitment, the billionaire roll at $35 puts o-toro, black truffle, black caviar and gold flake on snow crab and tempura asparagus.
The bar is not an afterthought. There are craft cocktails built on premium spirits and Japanese ingredients, a curated premium sake list, and imported and domestic beer. Regulars single out the lychee martini. The name is not decorative either. Nomu means "to drink" in Japanese, which tells you where the priorities sit.

Go at lunch first. The lunch menu starts at $15 for chicken teriyaki and $16 for shrimp tempura, and the sushi lunch is $18 for five pieces plus a California roll. It is the cheapest possible way to find out whether the fish here is as good as people say, and multiple reviewers have said they came back three times in one week after trying it once.
Two practical notes. It is closed Mondays, so do not make it the Monday plan. And Shadowood is in the middle of a large redevelopment right now, with demolition and new construction running through 2027, so the lot looks different than it did last year. Give yourself an extra few minutes and expect to park a little farther out than you would like.
