Guaca Go, the Florida Fresh-Mex brand built entirely around that one idea, is now serving at 10101 Southern Blvd in Royal Palm Beach, and it cut the ribbon on National Guacamole Day, which tells you how seriously they take the premise.

What You're Getting Into
The menu splits two ways. There are chef-built bowls, burritos and salads with the combinations already figured out for you, and there is a Build Your Own platform if you would rather run the show yourself. Either way the guacamole is standard, and the brand keeps things gluten-free, vegan-friendly and seed-oil-free across the board.
The Florida Bowl is the one to start with and runs about $12.75. It is citrus kale and Mexi brown rice under their Southeast guac, with pineapple salsa, elote corn, black beans, pineapple jalapeno and a cilantro lime sauce, and it tastes like someone actually thought about what South Florida produce does well together. The Mediterranean Bowl goes a different direction with yellow rice, chopped romaine, Mediterranean guac, cucumber salad, saucy chickpeas, pickled onion and a creamy garlic sauce.
If you build your own burrito, you get two bases, half an avocado mashed into guac, five mix-ins, three premium toppings, your protein, a house-made sauce and a crunchy topping, all pressed into a flour or spinach wrap. The Guaca Bowl is the stripped-down original and skips the extras entirely: chips, a full scoop of guac, protein and sauce. For something lighter there are lettuce tacos, snack packs, kids' meals and avocado toast starting around $7.35.
The room runs on speed. You order, they build it in front of you, and you are back in the car in a few minutes. This is weeknight dinner territory more than sit-down territory, with most of the menu landing somewhere between $7 and $13.

That thing about having eaten it already: the Guaca Go cart is a fixture at the South Florida Fair, the Delray Beach Open, the Cognizant Classic, spring training at Roger Dean Stadium, the Miami Open and Formula 1 weekend in Miami. The hours are 11 am to 8 pm every single day, which makes it a real weekday lunch option if you work anywhere along the Southern Blvd corridor. The West Palm Beach and Delray Beach locations have been running long enough to build a track record, and the reviews say roughly the same thing over and over. People talk about how much food they get for the price, how fresh everything tastes, and above all how generous the guacamole portions are.
